Stuffed Zucchini Ingredients 4 medium or 2 large zucchini 1 pound (lb) of ground beef or 1 can of baked beans in tomato sauce 1 medium onion chopped 1 can of tomato sauce (or tomato soup with ¾ cup of water added) 2 cups cooked rice 1 cup of shredded cheese salt and pepper to taste. Follow these steps 1.Cook rice according to package directions. 2.Cut onion into small pieces. Put onion and ground beef in the fry pan, and fry until meat is no longer pink. If you are using beans, fry the onions in vegetable oil (a drop the size of a loonie), add the beans and heat. 3.Heat oven to 350 degrees F (180 degrees C). 4.Add tomato sauce or water and tomato soup, and cooked rice to ground beef. Simmer for 10 minutes. 5.Cut zucchini top off. Cut zucchini in half from top to bottom. Scoop out the seeds from each zucchini to make a boat: a) cut zucchini top off b) cut zucchini in half c) scoop out seeds 6.Put zucchini halves in the baking dish with the cut sides up. Add water to the baking dish so that it just covers the bottom. 7.Fill the zucchini halves with the ground beef sauce. Sprinkle each half with grated cheese. 8.Cover the baking dish with a lid or tinfoil, with the shiny side facing in. Put in the oven and bake for 30 minutes. This recipe makes a balanced meal with foods from all four food groups. If you don’t have cheese, have a glass of milk with the stuffed zucchini instead.
