Yugoslav Recipes:

Serbia is famous for many traditional dishes. Among these include recipes for rostilj (BBQ), beans, goulash and corba (stews), desserts, and pastries. Razjnjici, pljeskavica, gibanica, burek, kifle, sarma, pasulj, paprikas, and of course sutlijash are but naming a few. Serbian meat dishes typically contain pork, lamb or veal. These are often combined to come up with flavourful dishes such as cevapi, for which Sarajevo is famous. Traditional spices include paprika and garlic. Slijivovica, or Serbian plum brandy, is one of the world's favourite and infamous moonshines. Other types of rakija (brandy), besides slijivivica, include kruska (pear brandy), kajsija (apricot brandy), and unforgettable loza (Montenegran grape brandy). The best of these are home-made and traditionally all families have at least one source that makes the wonderful stuff. Unfortunately, we can't give any of the recipes here in concordance with Canadian law. You'll just have to buy the store-bought stuff (80-100 Proof), or visit your local Serb! One shot of this stuff in the morning will cure you of any diseases (ancient Serbian recipe), and more shots will make you forget everything. Wines and beer are less noteworthy, although a few excellent types are nationally produced (Vranac (a make of red wine)) and Niksitsko pivo (beer from Niksic) are 2 of the most famous, and widely exported (in periods when sanctions are down).

    Originally a Serbian word?: "For reasons of clarity, the term pepper for Capsicum species will be totally avoided here. Instead, I will use paprika, which is moderately common in English (for the dried spice), more so in other tongues; it was loaned from Serbian pàprika or Hungarian paprika (both Serbian and Hungarian cuisine make much use of middle-hot Capsicum powder). Ultimately, also paprika derives from the name of pepper (Serbian pàpapr)."
